Chocolate and peppermint we made for each other. The creamy rich taste of cocao combines beautifully with the zestiness of peppermint, to make the most delicious chocolate peppermint slice.

If you're a traditional peppermint slice lover who's wanting to embrace the goodness of wholefoods, then this raw peppermint cake is perfect for you. Easy to make and super tasty, this gluten-free, no-bake + vegan slice will not disappoint.

Here's the recipe.

Prepare the Base

2 c raw walnuts
1 c raw pecans
1/4 c cacao powder
10 medjool pitted dates
2 T coconut oil (optional)
1 tsp vanilla essence

Line a 20x20 cm spring bottom cake tin with baking paper.

Use a food processor to lightly chop nuts until still chunky. Add remaining base ingredients and process until combined. Only add coconut oil if the base in not binding. When a dough ball forms press into the tin.

Create the Filling

1 c fresh mint leaves, washed and chopped
2 c soaked cashew nuts
1 c coconut cream
1/4 c maple syrup
1/2 c coconut oil
1/4 c lemon juice
1/2 tsp spirulina (optional for rich colour)
2 tsp peppermint essence

Ice and Seve

1/3 c coconut oil, melted
1/4 c maple syrup
1/4 c cacao

Whisk ingredients together and pour over filling. Feel free to double quantities for a thicker chocolate layer. Freeze overnight and cut frozen. Enjoy!
