Looking for an avocado recipe for an abundance of ripe avocados? Here's one of our favourites. It takes the traditional key lime pie and zests it up with a bunch of wholefood raw ingredients.

One of the seven pillars of self-care is nutrition. And while there's heaps of different approaches to nutrition and wellness, one thing that all the experts agree on is - eat more fruit and vegetables. 🤗

Avocados have been called one of the world's most perfect foods. Why? Avocados contain an abundance of vitamins and minerals, with significant vitamin C, E, K, B2, B3, B5, B6, folate, magnesium, potassium, copper and manganese. Packed with fibre and healthy fats, they're a great addition to a health-filled diet.

This dessert is a perfect celebratory cake or a raw sweet treat when avocados are plentiful.

Prepare the base

1 c raw macadamia nuts
1 c raw pistachio nuts
1 c raw cashew nuts
2 tsp lime zest
10 medjool dates
2 tbsp coconut oil

Line a 20 x 20 cm spring bottom cake tin with baking paper.

Use a food processor to lightly chop nuts until still chunky. Add remaining base ingredients and process until combined. When a dough ball forms press into the tin.

Create the filling

4 ripe avocados
2/3 c lime juice
2/3 c coconut oil
2/3 c maple syrup
2 tbsp lime zest
1 tsp vanilla essence

Place all filling ingredients in a power blender. Blend until smooth. Pour onto base.

Place in the freezer to set for at least 4 hours. Overnight is best. Garnish with lime zest before serving. Rest in refrigerator for an hour before serving for extra creaminess.
